Grey squash is a good source of vitamins A and C. It also contains high amounts of potassium and foliate along with niacin, which is a B3 vitamin that helps maintain heart health. Be aware that it is best to not peel the squash as most nutrients are found in the peel.

Traditional Culinary Uses

Grey squash can be grilled, steamed, sautéed, or stuffed. They can also be incorporated into stir fries or stews. Grey squash is extremely similar to zucchini squash and can be used in similar applications or even as a substitute. Traditionally, grey squash is used in the traditional Mexican dish Calabacita con Puerco, a pork and squash dish often served with a side of tortillas.

How to Prepare

Wash grey squash gently before use. The skin is edible and does not need to be peeled. Grey squash is most often cut into rounds or half rounds for dishes.

How to Store & Use in the Kitchen

Store whole, uncut grey squash in a plastic bag inside the crisp drawer of the refrigerator. Avoid storing in the freezer as grey squash is susceptible to chilling injury. Grey squash will not keep once cut and must be used immediately.
