What is Cardoon and How to Use It

The weather is slowly but surely turning. As some seasons wind down, let’s take a look at a limited time specialty before it’s gone for the year: cardoon.
What is Cardoon?
Cardoon (sometimes spelled like cardone) is a herbaceous perennial that is closely related to artichokes. The plant itself grows purple flowers, while cardoon is the stalk of the plant. In appearance, cardoon looks like celery, but the similarities stop there. Cardoon should be a grey-green color with heavy, straight, and rigid stalks.
What does Cardoon Taste Like?
The flavor of cardoon is sweet, nutty, and bitter, very similar to an artichoke heart.
When is Cardoon Available?
Cardoon is a seasonal variety out of California that is typically available from late winter to early spring.
How to Store Cardoon
Store cardoon cold at 34°F.
Professional Uses of Cardoon
Cardoon is typically never eaten raw. It is commonly fried, boiled, or sauteed. Prior to cooking, you should remove the ribs (AKA strings) of the stalk by using a peeler or knife.
If merchandising, make sure your customers are aware that while cardoon looks like celery, its actually quite different and more closely related to artichokes.
