Penne with Garlic, Chicken, Basil and Greens


Add olive oil to a large skillet over medium-high heat.  Add onions and mushrooms; cook until onions are tender and mushrooms are dry.  Stir in basil, garlic and chili pepper; cook 1 minute.  Add chicken, broth, spinach or kale and tomatoes; bring to a boil; reduce heat.  Keep warm.  Meanwhile cook the pasta according to package directions.  Drain; reserving 1/2 cup pasta water.  Add cooked drained pasta to skillet with chicken and vegetable mixture.  Toss well.  If pasta seems dry add reserved pasta water.  Serve topped with parmesan.
