Pearl Couscous with Parsley, Cilantro and Greens


Combine lemon juice, cilantro and parsley in large bowl.  Whisk in olive oil until well mixed.  Make couscous according to package directions.  When cooked, stir into dressing.  Add greens so they wilt slightly from the heat of the couscous.  Add remaining ingredients.  Stir and combine.  

Tip: If dried cherries are large they can be coarsley chopped for better distribution.
