
Green Peanut
Green peanuts are fully mature. They are freshly dug from the ground but are not put through the drying process. They are considered "green," although their color is the light brown associated with dried peanuts. Peanuts that have been dried and not roasted are called "raw" peanuts. Dried peanuts have a longer shelf life, but green peanuts are perishable and must be refrigerated, canned or frozen right away. Green peanuts can be boiled in salted water and eaten out of hand as a snack, or can be prepared with other vegetables, particularly in Southeast Asian cuisine.
