Artichokes should be stored at 32 to 36 F, 90 to 98% humidity and used fairly quickly after purchase. Only trim the stems of the artichoke when you are ready to use them as trimming them early can cause the bottom to blacken. Artichoke hearts can be blanched and frozen, but whole artichokes do not freeze well.
