Kaffir lime leaf

Kaffir lime leaf is widely used as an herb to flavor many Southeast Asian dishes. Kaffir lime is a thorny bush that produces a small, bumpy lime. The fruit is used in traditional Indonesian medicine. The leaves have a distinctive hourglass shape and a very shiny surface when fresh.

Place leaves in an airtight container and refrigerate for two to three weeks. Freezing works best for preserving flavor, and the leaves do not need to be thawed before using.
