Green Tomato

The green tomato is the red tomato's counterpart. Having been plucked from the vine early, they are the unripe versions of larger heirlooms, grape, beefsteak, and plum tomatoes. They are firm to the touch, and their flavor is palatably acidic and a bit tart. Their thick, refreshing flesh provides structure to many dishes. Most commonly, green tomatoes are fried, but their versatility doesn't stop there, they can be pickled, baked, and simmered into sauces.
